no justice

Tragedy, my need to get a real camera or a better phone is coming to a head.  I tried but unfortunately I could not capture the mouthwatering masterpiece that my roommate Eddie and I prepared tonight.  I hope that my words can do it some amount of justice.  


Eddie and I teamed up when we were rooting through the refrigerator trying to figure out what to cook for dinner.  What we found was a small assortment of veggies, frozen salmon that was caught this summer and my daily crock pot of beans.  What resulted from these items was just freaking awesome... 

The salmon was easy, a nice sized fillet (enough to feed four people) seasoned with a dry rub and baked till it was flaky.   The rub is one of my favorites for salmon I got it the last time I was passing through Seattle, Tom Douglas's Rub with Love for salmon.  I have yet to try Tom Douglas's other rubs, but it's so hard to want to get something else when I know the salmon rub is such a winner for a consistently delicious, quick and easy baked salmon.  

Roasted veggies consisted of beets, carrots, garlic, apple, red potato tossed with dry green chili, summer savory, chili infused olive oil and sea salt, baked for 1 hr and 15 minutes-ish.  

The kale was sauteed with onions, garlic, ginger and soy then it was sprinkled with hemp seeds partially as a garnish and partially because I really like the nutty flavor of hemp seeds.

Tonight's crock pot of beans was a mix and match assortment spiced with curry, garlic a tiny bit of ginger and salt.  I eat a lot of beans and lentils because they are diverse, easy, affordable, and super healthy for you.. it's really important to have your daily fiber intake.. your body will love you more if you do, not just talking about digestive issues here, it's great for cholesterol and blood pressure and the list continues.  There's even a song something about beans, beans good for the heart.. just remember apples, beets, carrots, garlic and potatoes baked with chili and some other spices kicks ass..

  2. The easy fix for that is to come visit me!!! :) my roommates are probably as big a foodies as me and, and there's fantastic chocolate shops and and stuff to see and do!!
