foodie friends are the best of friends

It is so nice to be home even though there is a mountain of things I've been avoiding while on "sabbatical".. Even though I still don't know what I'm up to or what's next.. I can say that I have missed my friends terribly and it is so very nice having a kitchen again.  I have missed having a stove, pots and pans, a refrigerator of my own, cabinets full of spices and other goodies.  I've even missed the mountain of dishes that get created when cooking.


Fish tacos are best made by professionals..  I like Mexican food.. but when out and about I have developed a habit of never eating the fish tacos... bad fish tacos have ended my "relationship" with really good Mexican restaurants..  Everything else on the menu can be good but one bad experience with fish tacos can turn my tummy away forever. I just can't let that happen anymore, so my decision was to stop ordering them when I'm out and about and only let myself or my friends cook them because we know what we're doing.  I'm not trying to be egotistical or negative.. and I'm sure that good fish tacos can be found out and about.. I just don't want to take my chances of getting fishy, not so fresh, overcooked or just plain bland fish tacos anymore.. Bad fish tacos are just so very bad.  Good fish tacos are what Eddie and Theresa fixed up the other night.

Since this is the first time I'm sharing directions to cook something I'm going to go ahead and throw a disclaimer out there about the way I cook.  I do not measure when I cook, I barely measure when I bake, nothing ever turns out exactly the same, I cook everything to taste and my baking is questionable.

Good Fish Tacos:

Blackened Halibut and Cod (blackening seasoning  = a mix of Tony Chachere's + Garlic Gourmet Killer Cajun)
Cilantro Chopped
Green Onions Chopped
Lime
Chopped Napa Cabbage
Grated Sharp Cheddar
Theresa's Concoction (mayo + sriracha hot sauce + a little of each garlic, cilantro, lime, avocado) can be made ahead
Flour Tortillas

Blackened Halibut = Take halibut sprinkle blackening seasonings to desired spicy level pan fry both sides till cooked.
Theresa's Concoction = mix concoction ingredients and let set for an hour approximately.
Enjoy yummy tacos
