skinny-dippin

What do you do when you have a 7 avocados and they're all ripe?  There are many, many dishes that I use avocados in but only one of them is not a dessert and is capable of killing off a good quantity of avocados; guacamole.  That decided Eddie and I had Latin dip night followed by Biutiful a very striking, touching all around great movie I would recommend watching it..  just know that it's a little sad, very real, a bit dark, subtitled unless you speak Spain Spanish (Spanish with a lisp) and for lack of a bigger vocabulary beautiful.



Latin inspired dip night consisted of guacamole and ceviche which are both perfect for the light summer evenings that are beginning to finally grace us up north.

Guacamole

Ingredients:
1/4 red onion - finely chopped
1/2 seeded tomato - finely chopped
1 jalapeño finely chopped (optional - for those that like their guac with a little kick)
2 tablespoons fresh squeezed lemon juice
3 ripe avocados
1 pinch of sea salt
1 tablespoon of chopped cilantro

Mix all ingredients together, I like to use my hands for medium sized chunks of avocado.  For smaller chunks use a mortar and pestle or something like that.


Ceviche

1 lbs of halibut - cut into small cubes
lemon juice appx 1/2 cup
juice of 1 orange
juice of 1 red grapefruit
1 tbs of ginger
1 pinch of cumin
2 pinches of sea salt
2 cloves of garlic
1/2 red onion - finely chopped
1 jalapeño - finely chopped
2 tablespoons of cilantro - chopped

Directions:
Mix all ingredients and let sit for at least two hours.  This lets the acids cook the fish and all the flavors soak into the juice.. Devour with your favorite corn chips... Mine are Santitas white corn.
