I would never dream to claim to have much of anything in the realm of baking skills. I am not a fan of measuring if you haven't noticed from my haphazard quantity descriptions. I'm a big fan of pretty close and within reason. That being said I've never been one to dabble into the art of breads and I will probably never touch pastries outside of buying them at shops that have pretty tarts and fancy cakes that they delicately place into boxes that are deftly tied up in string. I admit that I make cookies and occasionally I dabble in the cake world but the results are always deliciously unpredictable. Sometimes my cake weighs as much small dog and sometimes my cookies have a texture closer to cake.
Being a non measurer I really never imagined myself making bread. I did momentarily entertain the passing fancy of baking. I bought the artisan bread in five minutes a day book and after much procrastination and several other friends actually getting into it I decided not try it.. partly because i didn't want to dedicate a large portion of my crowded fridge to a bowl with a starter bit of dough the other reason was because Five minutes was really closer to 1/2-1 hrs.
Anyways, I was told to try a simple recipe for whole wheat bread recently. I was skeptical but it had something around 1200 five star reviews so I decided to give it a whirl. I surprised myself. The bread turned out looking like bread... It even tasted like bread.. with a bready texture to boot. I even only vaguely measured and I didn't know there was a video so I also apparently didn't follow directions very well because I'm not observant (drat there goes my career as a international spy).. I didn't let the first step sit for half an hour and get bubbly.. When I had mixed up the first step it was sticky I thought that it wouldn't possibly get bubbly so I mixed the salt butter and honey together and poured it on. Then I transferred it to a big soup pot because my bowl wasn't big enough. I took the honey mixed it with softened butter and salt then stirred the mixture into the big sticky dough ball. I also added more honey than the recipe called for.. The recipe said 1/3 a cup but I only had a 2/3 cup so I may have just guessed at a little past the mid point on the 2/3 cup..
Just remember they were making bread before convection ovens, measuring cups and the internets...;) So of course you can make it! Yay for Mali baking!
