how to speak southern

The tiny neglected garden in the backyard has produced some mighty tall mustard greens that have been asking for consumption... I decided if we were making greens we may as well go southern-ish all the way... 

Sauteed Mustard Greens

Ingredients: 
a lot about 1 lb Mustard Greens - torn into smaller palm sized pieces  
1/4 Sweet Yellow Onion - sliced thinly
1 clove garlic - minced
1 tbs of bacon grease or 1 tbs of veggie oil of choice if going for vegetarian (add salt to taste if not using bacon delicious heart clogging grease)
pepper

Directions: 
Heat pan with bacon grease.  Saute onions till soft add garlic and mustard greens then salt and pepper to taste.  

My interpretation of a grilled pork chop not very southern but very tasty
Ingredients:
1/2 chopped onion
1 lb of pork chops
2 cloves garlic
salt
cumin
1 - 2 tbs of apricot jam
sage

Directions: 
Marrinade pork chops for about 1 hr then grill to done-ness of liking (I had a med-rare one in France once.. it scared me.. I was just a kid I didn't know you could have pork that way.. Although.. it still scares me...) 
  
Basic Crock Pot beans - 
Note: I will never share beans with Eddie again because he complained that he liked stove top better and I'm way too lazy for that. So next time I make beans know that I'm not sharing.  Take that Eddie Erdmann.. Make your own beans, bean snob!!  Also, I have a small crock pot that means I make at most 2 -3 cups of dried beans.. 3 cups is probably an exaggeration.  
Ingredients: 
Pinto Beans
Garlic - 1 clove
Bacon (vegetarian option is to use oil of choice, I like grapeseed)
Salt - to taste
Summer Savory - 1 tsp-ish

Directions for Crock Pot Beans:
Soak beans over night. Rinse (rinsing helps make them less um gas-a-fying..).  Cook in crock pot with plenty of water till done (may need a little more water if the beans soak up all the water), that should be at least 6-10 hrs.  When all the beans are tender take a moment to smash a few to release some starches into the bean water which thickens it up a little.  Final instruction to be followed very carefully and precisely.. do not share with Eddie.. he has lost his crock pot bean privileges.       

Grilled Corn.. apparently Latin American style.. so everyone tells me.. I just know a friend made some told me how to do it and I've never made corn any other way since.. 
Ingredients: 
Fresh Corn on the Cob
Parmesan
Mayonnaise
Dried Ground Red Chili
Lime

Directions: 
Grill corn till a little toasty.  Rub mayonnaise, sprinkle parmesan, red chili and lime.. yums!!
