For my first post I decided to pull out one of my favorite savory
chocolate encounters of 2010. During a trip to Utah visiting friends I
was taken to the Red Iguana a
popular local Mexican restaurant known for it's selection of delectable
moles.
Something that needs to be said about me is that I am an
indecisive person by nature and can be easily overwhelmed by too many
options. The waiter quickly realized what he was dealing with and
offered to get a sampler plate to me to help me with my selection. They
were all yummy but I knocked it down to two and let him surprise me
with the final plate (my cop out from really deciding). I ended up
with mole coloradito, I was not disappointed. The menu listed this mole
as consisting of "Pine nuts, almonds, peanuts, dried chile chiuacle and
guajillo chiles, blended with fresh chile poblano and Mexican chocolate
- served over a grilled pork loin.". If you're ever in the Salt Lake
City area it's definitely worth a visit. The photo is of my mole
sampler plate.
